A delicious, dry red wine with a smooth, y et distinctiv e character. The palate shows good body and is f ull of f f lav our with aromatic black cherry and raspberry f ruit, was well as spice notes. The wine has excellent concentration and this is shown by a long lasting f inish.
How to serve
Excellent with f ood or by itself . Will accompany almost any f uller f lav oured dishes f or example, roasts, barbecue, cheese, pasta and v egetarian.
Classic f ermentation method, inv olv ing selectiv e extractiv e enzy mes, which are compatible with the activ e dry y easts. Fermentation up to 30º C in the f irst 2/3, and lowering down to 20º C during the last 1/3. During the whole fermentativ eprocess, pumping ov er 2 times per day , using each time half of the v olume contained in the v at. Af ter the alcoholic f ermentation, the cap is plunged f or 30 day s, and during that period, extraction of the gentle tannins is conducted, along with the malolactic f ermentation and the natural stabilization of the wine.
Wine is aged in American, French of Allier and Portuguese oak barrels of 225 Lt, f rom the best origins, f or 3 months. Ageing in bottle a minimum 3 months af ter bottling.
